Tropical Ginger Smoothie

I have been currently OBSESSED with fresh ginger recently and love the idea of adding it to just about everything these days, including my smoothies. I had one very similar on my recent trip to Florida and though I would try too replicate it. And I think I nailed it! absolutely LOVE this smoothie combo. It is very simple but so good! 

Ingredients:

  • 1-2 cups fresh spinach
  • 1 cup coconut milk or coconut water (any non-dairy milk would work but I love the coconut flavor in this)
  • 1/2-1 inch knob of peeled ginger
  • 1 frozen banana (add more for a thicker, more creamy texture)
  • 1/4 frozen pineapple
  • 1 tsp hemp seeds for topping (optional)

Directions:

  1. Mot blenders should be able to blend all of these ingredients without a problem but if you want to make sure it is well blended, I suggest blending the spinach, coconut milk, and ginger first until smooth
  2. Then once you have a smooth green liquid, add the banana and pineapple
  3. Blend that until smooth
  4. Pour into a glass (or jar in my case) and top with hemp seeds
  5. Enjoy!
