Double Chocolate Cookies

These cookies are super easy to make and perfect for parties or get togethers with people who may not be vegan. You can't even tell! 

Ingredients: 

  • 1 tbs ground flax seeds
  • 3 tbs water
  • 1 cup flour (GF, whole wheat, all-purpose)
  • 1/3 cup of cocoa powder
  • 1 tsp baking soda
  • 1/2 cup vegan butter
  • 1/3 cup brown sugar
  • 1/3 cup regular sugar 
  • 1 tsp vanilla extract
  • 1/3 cup dairy-free chocolate chips
  • 2-3 tbs non-dairy milk

Directions:

  1. Preheat oven to 350 degrees
  2. In a small bowl mix the ground flax with water and let sit for about 10 minutes
  3. In a medium size bowl, mix all of the dry ingredients together
  4. Then in a larger bowl cream the butter and sugars together (you can sub coconut sugar for both)
  5. Add the flax egg and vanilla to the butter mixture
  6. Add the dry ingredients to the wet ingredients and mix
  7. Fold in the chocolate chips
  8. If your dough is a bit dry add in some non-dairy milk until you have a soft dough
  9. Scoop onto parchment lined baking sheets 
  10. Bake for 10 minutes, cookies should be crispy on the outside but soft on the inside
