Oil-Free Chocolate Pancakes

These are perfect sunday brunch breakfast! So easy to put together but so delicious! Top with your favorite nut butter or melted chocolate, fresh fruit, and some maple syrup and that's the perfect breakfast! You can double or even triple this recipe if you're making these for a big crowd or you are just really hungry :)

Ingredients: 

  • 1 2/3 cup of flour (GF, regular, whole wheat, oat, etc)
  • 1/4 cup of cocoa powder
  • 2 tsp baking powder
  • 1 cup non-dairy milk
  • 2 tbs applesauce
  • 1 tsp apple cider vinegar

Directions:

  1. In a small bowl mix the non-dairy milk and vinegar and let that sit for 5 minutes
  2. In a large bowl mix the dry ingredients together
  3. Add in the milk mixture and applesauce to the dry ingredients
  4. Heat a nonstick pan on medium high heat
  5. Spray with oil or use vegan butter
  6. Add about a 1/4 cup of batter to the pan and cook for about 3-5 minutes on each side
  7. Serve warm with some maple syrup and fruit!
