Loaded Veggie Tofu Scramble

Tofu scramble is one of my favorite weekend breakfasts! So easy and quick to put together. Packed with protein and lots of nutrients from all the veggies! I love adding a ton of spices and ketchup to mine. Alongside some sprouted grain toast, it's the perfect breakfast! Watch how it's done in the video at the bottom of this post!

Ingredients:

  • 1 large zucchini
  • 1 bell pepper
  • 1 onion
  • 1-2 cloves garlic
  • 1 block firm tofu
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp rosemary
  • 2 tsp turmeric
  • 2-3 tbs nutritional yeast
  • 2 cups spinach
  • 2-5 tbs water

Directions:

  1. Chop up the zucchini, bell pepper, onion, & garlic. Make sure the larger veggies are cut into equal sized pieces so they cook at the same rate
  2. Add them to a large pan that has been preheated on medium-high heat. Add in some splashes of water to help them steam and cover with a lid for about 10-12 minutes. The veggies should be fork tender and broken down a bit
  3. Crumble in some tofu so it is in very small pieces and resembles a scrambled egg
  4. Add in all the spices and add a splash of more water if needed to deglaze the pan
  5. Add in the spinach and cover once more for no more than 5 minutes. The soinach should be wilted
  6. Serve with some toast and enjoy!!
