Vegan Snickers Bars

Snickers are a classic candy that are a favorite among many. You can't blame them though. With three layers covered chocolate, there's a reason why people love them. But fear not! I have veganized them to taste even better than the original! Made with only a few simple ingredients, these 'snickers' bars are super easy and fun to make. There is a nougat layer, caramel layer, and a peanut layer, all covered in chocolate. They are refined sugar-free, easily oil-free, and gluten-free! There is a recipe video at the end of this post!

The Nougat

Ingredients:

  • I cup peanut butter (unsalted, natural is best)
  • 1 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1/4 cup coconut flour

Directions:

  1. In a large bowl combine the peanut butter, coconut sugar, maple syrup, and vanilla until a smooth paste forms
  2. Then add in the coconut flour. At first it might seem like it will be too dry but keep mixing and it will come together into a stiff dough
  3. Place dough on a piece parchment paper and flatten out a bit with your hands
  4. Then take another piece of parchment and place it ontop of the flattened disk of dough. Roll out to about 1/4 to 1/2 inch thickness with a rolling pin
  5. Trim the edges so you have a rectangle shape
  6. you can reroll the scraps or just eat them :)
  7. Once the dough has been rolled out, place in the freezer to set until the other elements are ready

The Caramel

Ingridients:

  • 1 cup dates, pitted (you may need to soak them overnight depending on how soft they are)
  • 1/3 cup hot water
  • 1/4 tsp sea salt
  • 1 tsp vanilla

Directions:

  1. In a high speed blender or food processor, blend the ingredients until smooth
  2. It may take up to 7 minutes to get it smooth. It should become lighter in color and texture

The Chocolate

Ingredients:

  • 1 cup chocolate (good quality, dark)
  • 1 tsp coconut oil (optional)

Directions:

  1. In a small bowl add the dark chocolate and coconut oil
  2. Set over a pot of boiling water, but don't let the water touch the bowl
  3. Stir constantly until completley melted

Assemble

Directions:

  1. Take the nougat layer out of the freezer and spread out the caramel in an even layer
  2. Add on some unsalted peanuts and gently press them into the caramel
  3. Freeze for about 10 minutes, or until slightly firm to the touch 
  4. Once the rectangle is frozen, slice it into any shape you wish. I made them into about 1x3 inch bars
  5. Separate the bars and drizzle the chocolate over the whole thing including the sides. I used a spoon to help me
  6. Place back in the freezer until the chocolate has set
  7. Enjoy responsibly! They are AMAZING :)
