Protein Packed Tofu Scramble

This meal is a perfect addition to any buddha bowl or on its own! Packed with fiber and protein, this tofu scramble will keep up full and fueled. Feel free to add any spices you like and change it up by adding lemon juice or lime, ketchup, or sriracha! I served mine on spinach with bell peppers, and dalop of hummus. I also added extra nutrional yeast and some hot sauce!

Ingredients: 

  • 1 block tofu
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp turmeric
  • 1/2 tsp black pepper
  • 1 tbs nutritional yeast
  • 1 tbs lemon juice
  • 1 can garbanzo beans (rinsed & drained)
  • Fresh parsley or cilantro (optional)

Directions:

  1. Preheat a nonstick pan on medium-high heat
  2. Crumble a block of tofu, either in the pan or in a separate bowl. The pieces should be pretty small. About the size of a dime or smaller
  3. Let that cook for a minute and then all the spices and mix until thoroughly flavored
  4. Add in the garbanzo beans and cook until warmed or let sit in the pan until crispy
  5. Then fold in the fresh herbs
  6. Serve on a bed or spinach, with toast, or with crispy potatoes
  7. Enjoy responsibly!
