Maca Chocolate Chip Grain-Free Muffins

Muffins are basically the perfect food in my opinion. Easy to whip up, mess free while eating, and super easy to grab on the go! The only problem is that usually they are made with so much oil and refined grains. That does not fuel me for my day or make me feel my best! So I have this recipe that is packed with protein, healthy fats, and no refined grain or sugar. No oil, no gluten, no problem! There is a recipe video at the end of this post!!

Ingridients:

  • 1 cup almond butter
  • 1/2 maple syrup (or other liquid sweetener)
  • 1.5 cups almond flour
  • 1/2 tapioca starch
  • 1 tbs baking powder
  • 1 tsp vanila
  • 1-2 tbs maca powder
  • 1/4 non dairy milk
  • 1/2-3/4 cup non dairy chocolate chips, plus 1/4 cup for the top (optional)

Directions:

  1. Preheat oven to 350
  2. In a large bowl, combine almond butter & maple syrup
  3. Add in the remaining ingredients except for the non dairy milk & chocolate chips
  4. Mix that together until a thick dough has formed
  5. Add in the non dairy milk and fold together until smooth
  6. Add in the chocolate chips and combine gently
  7. Line a cupcake tray with cupcake papers or spray with oil to prevent sticking
  8. Scoop about 3/4 of the way up the sides of the tray. About a 1/4 cup
  9.  Sprinkle over the extra chocolate chips and press gently into the tops of each muffin
  10. Bake for 20 minutes or until the spring back when touched and are golden brown
  11. Let sit for 10 minutes before removing from the pan
  12. Serve warm, freeze for a later meal or snack, or pack in a lunch!
