Grain Free Banana Waffles

I have been going through bananas like crazy and this recipe is one of the reasons why! If you love sweet breakfasts as much as I do, then you are going to LOVE this recipe! It is such a treat and so yummy. These waffles are grain-free, gluten-free, refined sugar-free, and super quick and easy to make. I highly recommend using a high speed blender to make the batter because that will save you some time and elbow grease. Of course you can mash the bananas by hand if you don't have a blender.  

Ingredients:

  • 2 ripe bananas
  • 1.5 cup almond flour
  • 1/4 cup tapioca starch
  • 2 tsp baking powder
  • 1 flax egg (1 tbs flax, 3 tbs water)
  • 2 tbs coconut sugar
  • 3 tbs almond butter
  • 3/4 cup non dairy milk
  • 1/2 cup chocolate chips

Directions:

  1. Preheat your waffle maker to the highest setting. I fit does not have different levels, just ket it heat up
  2. If you are mashing the bananas by hand, mash them until fairly smooth and then add all of the remaining ingredients and fold to combine. If you are using a blender, add of the ingredients to the pitcher except for the chocolate chips
  3. Blend until smooth, be careful not to over blend this
  4. Gently pour in the chocolate chips and do a quick pulse or fold in with a spatchula
  5. If waffles tend to stick to the waffle maker, I suggest coating it with some coconut oil just to ensure there is no sticking
  6. Add enough batter to cover the whole waffle iron and close
  7. Let the waffle cook a little bit longer than other waffles. These waffles are better crispier. And they are easier to get ou when they are firmer
  8. Remove from the iron when golden brown
  9. Serve with some maple syrup, pumpkin seeds, chopped dark chocolate, and pecans on top!
  10. Enjoy!
