Simple Mashed Potatoes

These mashed potatoes are pretty simple but so fluffy and rich. Make then for any holiday gathering and they're sure to be a hit!

Ingredients: 

  • 2 lbs of potatoes (I used red but russet or golden all work great too)
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1 tsp rosemary (optional)
  • 1 cup non-dairy milk
  • 3 tbs vegan butter

Directions:

  1. Bring a large pot of water to a boil
  2. Wash and peel (optional, I chose not too) potatoes
  3. Boil for about 10-15 minutes depending on the size or until fork tender
  4. Drain and place back in pot
  5. Use a potato masher the get most of the lumps out
  6. Add in seasoning, milk and butter
  7. Mash until you have the desired consistency
  8. Enjoy!
