Detox Vegetable Soup

So hearty and perfect for the cold season! Feel free to add in what ever veggies and spices you have...these are just the ones I was feeling today.

Ingredients:

  • 1 medium onion
  • 3 cloves of garlic
  • 6 oz of tomato paste
  • 1 tsp turmeric
  • 1 tsp paprica
  • 1 tsp rosemary
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper 
  • 1 bunch of celery
  • 4-6 carrots 
  • 1 can of crushed tomatoes
  • 6 cups of water or vegetable broth
  • 4 bullion cubes
  •  4 small sweet potatoes (cubed)
  • 1/2 a head of broccoli 
  • 1 cup of frozen peas

Directions:

  1. In a large pot, cook the onions down for about 5-10 minutes until transparent (I used water instead of oil)
  2. Add garlic to the onions along with the spices
  3. Cook the spices for about a minute then add the tomato paste
  4. Add the celery and carrots to the pot and add the water
  5. Add the bullion, bring to a boil
  6. When the water starts to boil put the sweet potatoes in and cover for 10 minutes or until the potatoes are fork tender
  7. Add the broccoli and corn
  8. Cook for 5 more minutes
  9. Serve warm with quinoa or sliced bread and enjoy!
